Friend Fridays: Nathan Hanscome's sprinkledoodle cookies


While making our favorite snickerdoodles one afternoon, my son Nathan asked if we could roll them in the usual cinnamon/sugar mixture AND in sprinkles. They turned out so yummy that Nathan dubbed them sprinkledoodles. So credit for this recipe should really go to Nathan Hanscome, age 7.

Sprinkledoodles
Preheat oven to 400
Combine:
¼ cup softened butter
¼ cup shortening
1 egg
1 1/3 cup sifted flour
1 tsp. cream of tartar
½ tsp. baking soda
1/8 tsp. salt

Form dough into balls then roll in a mixture of:
¼ cup sugar
1 tsp. cinnamon (or a little more)
1 T colored sprinkles

Place balls about an inch and a half apart on an ungreased cookie sheet and bake for 10 minutes (a little more or less depending on your oven and type of cookie sheet you are using).

March 11: Peanut Butter Chocolate Chip Cookies

1 1/4 cup flour
3/4 tsp. soda
1/2 tsp salt
1/4 cup cream cheese
1/4 c. shortening
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla
1 cup chocolate chips

Sift together dry ingredients in one bowl. Cream together cheese, shortening, peanut butter, sugars, egg and vanilla. Fold into dry mixture. Add chocolate chips. Drop cookies onto sheet, pressing a crisscross pattern into each with the tines of a fork.. Bake at 350 degrees for nine minutes. Makes 3 dozen.

February 27: Nutella Cookies

Oh how I love Nutella! I developed this recipe because of my sheer infatuation with it.


1/4 cup butter
1/4 cup cream cheese
1/2 cup Nutella
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 cup flour mixed with 3/4 tsp. baking soda

Melt butter and cream cheese in microwave for thirty seconds on high until nearly melted. Add nutella, sugars, egg, and vanilla. Beat in flour and soda. Drop cookies onto ungreased baking sheet and cook at 375 for 10 minutes. Makes 3 dozen.

February 10: Frosted Pumpkin Walnut Cookies

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
1/2 cup chopped walnuts

Cream butter, sugars, pumpkin, and vanilla.  Sift together dry ingredients and fold them into butter mixture.  Drop cookies by tablespoonful onto cookie sheet.  Bake at 325 for 12- 14 minutes.  Cool.
Frosting: Melt 2 TBS butter over low heat.  Add 1 1/2 cup powdered sugar, 2 Tbs. cream, and 1 tsp.
vanilla.  Stir to melt through.  Frost cooled cookies.  Makes about three dozen.

January 26: Cookie magic


These are inexpensive and yummy, and a great way to add fiber to your diet in a happy way!
 

Mary’s Chocolate Oatmeal Cookies

1 ½ cup thick cut oatmeal
¾ cup all purpose flour
½ tsp. Baking soda
6 Tbs. Baking cocoa
1 stick butter (1/2 cup)
½ cup light brown sugar
½ cup white sugar
1 egg
1 tsp. Vanilla

Stir together the first four ingredients, set aside. In bowl, cream together the butter, sugars, egg and vanilla. Stir the dry ingredients into the sugar mixture. Drop by tablespoon onto lightly greased cookie sheet. Bake at 350 for ten minutes.
